Age-old roots still play an important role in Sorrentino’s philosophy, but they have not stopped the ability of experimenting and innovating: the Aglianico Pompeiano variety, bottled in the great wine Don Paolo, is a rare exemple of oenological balance: between a meticulous wine-making and an impeccable work in the cave.
The crossover of indigenous and national grapes, cultivation methods, vines heigth, traditional and modern vinification techniques, wood barrel types, and various kinds of bottle ageing, make Sorrentino’s Company one of the most active italian caves, searching for a quality production. Grapes manual harvesting in pierced boxes, loving care of the plants, silence in barrel refining process, are gestures of an ancient knowledge belonging to the past centuries.
On the contrary, filtration, oenological work in laboratories, are the natural evolution of a precursory passion taking advantage of the most modern technical knowledges. All this is made to spread a legendary quality wine |
